Ingredients
- 2 cups cooked shredded chicken
- 1 cup enchilada sauce
- 1 cup shredded cheese (Cheddar or Monterey Jack)

- 1 tablespoon olive oil
- 8 small tortillas
- 1 teaspoon chili powder
- Salt and pepper to taste
Directions
- Preheat your oven to 375°F (190°C).
- In a pan, heat olive oil over medium heat and sauté the onions until translucent.
- Add the shredded chicken, chili powder, salt, and pepper. Mix well and heat through.
- Take a tortilla, fill it with the chicken mixture, and roll it up tightly. Place seam-side down in a baking dish.
